Alder wood makes a lightly sweet and musky smoke, traditionally used for smoked salmon but great for many other foods as well. Designed for Bradley smokers, these alder bisquettes make savory smoke in lots of other smoker brands as well. These compressed-wood "pucks" will work great in your beat-up old outdoor grill too.
