. We are now carrying 36 month aged, Incontro Cured Jamón Mangalitsa. Similar to Italian Prosciutto, but cured in a Spanish style to bring out a deeper and more complex tasting experience. American cured & raised on American family farms;including a farm in Nebraska, on open pasture and forests by Winkler Wooly Farms in Sonoma, CA & finished on an acorn diet. Bone-in and untrimmed. Minimum of 19lbs. Best if kept cool. Refrigeration or a dark cool area is recommended when not being used. It is a shelf stable- salt cured/preserved product. USDA proven and passed through water activity testing. Keep out of sunlight so the ham does not develop a rancid flavor. Keep wrapped in plastic wrap, or cheesecloth when not slicing or used.
